For this installment of the Farm Table Series, Vermont’s seasonal bounty will be interpreted through the vibrant culinary traditions of India’s western coast. Drawing inspiration from the spice-forward flavors of Goa and Karnataka, the menu will showcase pasture-raised meats, freshly harvested vegetables, and regional Indian preparations reimagined with ingredients sourced from Vermont farms and producers.
